
Lattice
I shied away from lattice work for a while. It seemed too complicated to me. That is until I saw a great You Tube video showing how it is done in an easy, and efficient way. This guy, Mike, has a great method. The photos below also help to show you how to make Mike’s awesome lattice crust.

With a pastry wheel, or pizza cutter, cut out your lattice strips.

Make a cross with two lattice strips.

Add two strips on either side of the vertical strip.

Starting at the bottom, lift up the middle, vertical strip halfway, and place a lattice strip down horizontally.

Now move to the right side, and lift back the top, horizontal strip. Place a strip down vertically.

Up at the top, fold the middle strip back, and place a horizontal strip down.

On to the left side, bend back the middle, horizontal strip. Place a strip down vertically,

At the bottom, bend the two even, vertical strips back, and place a strip down horizontally.
Continue this method around the pie until it is completed. Then, trim and flute the edges.
