Hey there! According to my baking plan, I am supposed to be working on petit fours this week, but take a look outside.  The leaves are turning red, brown, and gold, the air is getting crisp, and the squirrels are eating away at my decorative pumpkin.  Fall is here and I want to make Fall meals and desserts!  I want to make stews, and pies.  I want to sip on cinnamon coffee while nibbling on coffee cake in front of a roaring fire.  I want my kids to acclimate immediately when we turn our clocks back.  I want to enjoy this season because before we know it January 2nd will be here, and the winter time blues will be in full effect.  How about this, let’s make some delicious caramel apple coffee cake, and plan a trip to Maui for the months of January, February, and March.

Hey, guess what?  I’m not a fan of cheesecake.  Can you believe it? I don’t hate cheesecake, I just don’t crave it.  I’m also not a fan of pumpkin pie for the same reason.  Today I made mini cheesecakes that are a combination between a cheesecake and a pumpkin pie.  I tried one and they were good.  Will I be making them again?  No.  I brought some over to my parents to see how these mini cheesecakes fared as far as cheesecakes go.  They loved them and told me that I was such an amazing baker and daughter. Unfortunately, you need to take their review with a grain of salt. They also loved a bizarre- looking, yellow ashtray I made for them when I was in the second grade.  Anyway, here are low-fat, mini ginger pumpkin cheesecakes to bring us all into a Autumn frame of mind.  I hope you enjoy them.  Also, I would like to point out that I’m not quite sure why I, at 7 years old, would think that a homemade ashtray for my non smoking parents was an appropriate gift. Parenting can be heartbreaking.  They didn’t tell me this part when we took the newborn baby class at the hospital before we adopted Cameron.  I learned how to change a diaper and wrap an infant in an adorable little straight jacket using only the smallest of blankets, but I wasn’t prepared for all of the heartaches that come along with parenting. It’s tough to watch your child be left out or disappointed, and it’s equally tough to watch your child make mistakes. Anyway, I made you a plate of chocolatey-rich, and delightfully chewy, gluten free chocolate cookies. Unfortunately,  I ate all of them because parenting can be heartbreaking.   Continue reading →
