Limoncello Pound Cake

I made Limoncello pound cake yesterday.  It is a moist, lightly-sweetened cake soaked in a Limoncello syrup, and blanketed with a Limoncello icing.  Perfect for spring, but hey, a girl can dream, can’t she? As soon as the cake came out of the oven, I took my boys to the Museum of Natural History in New York City.  Here’s the proof:

See that look of excitement on my face?  That’s 10 years of acting lessons right there, baby (4 in high school, 4 in college, and 2 at a NYC acting conservatory).  What am I doing now?  Eating lots of cake, keeping two tiny humans alive, and pretending to see dinosaurs when needed.   I was asked recently if I missed the theater.  Yes, I do.  I loved performing, but if I had been successful, or had simply stuck with it longer, I would never have known Cameron and Wesley.  Let’s eat this cake, shall we? Esterhazy cake is a very special dessert.  It’s challenging to make, which is fitting because this was the Daring Bakers Challenge for the month of January (Jelena from the beautiful blog A Kingdom For A Cake was our hostess). The cake is made up of five layers of hazelnut meringue (dacquoise), filled with a sweet, creamy hazelnut buttercream, and topped with an apricot jam glaze, white icing, and melted chocolate.  Once I took my first bite I fell hard.   It was quite a process, which took me two-days to complete, but it was all worth it.  This is the type of dessert you make for someone you truly love.  It’s that special. Crepe Cake with Chocolate-Rum Mousse

If you want to learn how to do something well, do it over and over and over again.  That’s what I took away from today’s lesson.  I wanted to learn how to make crepes, so I threw myself to the wolves and made thousands of them. Okay, it wasn’t thousands of crepes, more like 24, and I made them into a crepe cake with chocolate-rum mousse!   This is a delicious, substantial cake.  There is just enough chocolate, creamy mousse in every bite.  The crepes are not sweet, but add a lovely, light base for the mousse.   And the rum teases just a bit, bringing out more of the dark chocolate flavor.   Oh, and that delightful, sweet whipped cream… I used Reddi Whip. Phyllo Dough Toaster Pastries

My son, Cameron, said to me today, “Mom, you’re the biggest poop of the United States of America.”  Call me crazy, but I think he was trying to compliment me.  The United States is so huge, so to be the biggest is pretty impressive.  If he said I was the second biggest I’d be upset, but he was very clear in his words.  Also, I couldn’t help but beam with pride that my 4 year old knew the name of the country he lives in.  And he said it with a patriotic tone.  I swear, I could hear the rhythm of the Pledge of Allegiance in there while he spoke. I hope I didn’t make you jealous.  Look, not all of us can be the biggest poop.  Anyway, that’s how my day started.  By noon, I was making these phyllo dough toaster pastries, and now, it’s 6 :30 p.m. and I’m drinking wine.   I don’t have much else to say about the day except that these phyllo dough toaster pastries are so darn good- crisp and buttery on the outside, sweet and gooey on the inside.   I ate one too many, and now I feel like the biggest human of the United States of America.   I just made you really, really jealous, didn’t I?
