I have so enjoyed getting to know meringue these past few days, but I think I need to end things between us. We recently found out that my youngest son, Wesley, is allergic to eggs.  Egg whites in particular.  Needless to say, having meringue around is not the wisest decision.   Therefore, I am packing Mr. Meringue’s tiny suitcase and evicting him from the premises.  He doesn’t have to go home, but he can’t stay here.  He’s leaving a lasting impression with me, though. This fudge cake with Italian meringue buttercream is so yummy, so decadent, and so everything I want in a man a dessert… but, you’re not nice to my kid, Meringue, so it’s over.  Good day, sir.  I said, good day! Meringue Hearts

Meringue hearts are wicked.  They are light as a feather, they taste of sweet marshmallow, and they disappear on your tongue so quickly you’re left wondering if you actually ate one, or had just imagined it.  So you eat another, and another, and before you know it you find yourself in the corner of the basement in fetal position holding an empty platter, with some red sprinkles on your chin, while your young boys play Mom Is A Rock, and proceed to climb all over you.  I guess this post is more of a cautionary tale. Lemon-Cream Filled Cream Puffs

Lemon-cream filled cream puffs sprinkled with powdered sugar and topped with candied rosemary was exactly what I needed in order to face the worst three months of the year.  I’m not a winter fan.  I chose to make a lemon pastry cream because I wanted something sunny on my taste buds.  I know that rosemary pairs lovely with lemon, so I went with that also.   The cream puffs are airy, and that airiness coupled with the pastry cream, powdered sugar, and rosemary makes for a sweet and light dessert.  It also reminds me of summer. Chocolate Souffle Brownies

It’s our first snowfall of the year.  Time to make hot cocoa Chocolate Souffle Brownies!   Before we begin, however, I feel compelled to list my resolutions for 2015, so that I can put them away, and never think about them again.  I’m kidding.  I’m in it to win it.  Here goes:

  1. Read at least one book a month.
  2. Do 20 minutes of yoga everyday.
  3. Put my phone, computer and ipad away when playing with my boys.
  4. Make a list of my resolutions.  (Hey, I did this one!)
  5. Give beets one more chance to prove themselves.   
  6. Learn how to market the blog, so that it’s not just you reading this, Mommy.
  7. Run a half marathon.
  8. Do something nice for a stranger. 
  9. Bake and decorate a three tiered wedding cake, and then have a party centered around said cake.  Invite friends and family and serve reasonably priced, but good champagne.  
  10. Figure out what champagne is good.  And at a reasonable price.
