Okay, I’m going to make this quick because my almost 5 year old son, Cameron, wants me to play Police Officers right now. There is a bad guy on the loose and Police Officer Jonathon (that’s me) and Police Officer David (that’s Cam) are the only guys to save the day. We’re also the only ones on the force. Anyway, this cookie is buttery with a hint of cocoa. And the white chocolate drizzle brings it on home with sweetness and style. The best part, however, is that it is so easy! I was able to make this while playing Superhero Squad this morning with Cameron and my 1 1/2 year old, Wesley. Cam was Batman, Wesley was Robin, and I was Wonder Man. Not Wonder Woman. Wonder Man. I like to post what lessons I have learned with each recipe. Here is my takeaway from today’s red velvet shortbread cookie exercise: 1. they are very easy to make, and 2. my son sees me as a man. Chocolate Chip Oatmeal Nut Cookies
I don’t mean to brag, but this is Santa Claus’s favorite cookie. Well, according to the 1982 edition of The Santa Claus Book by Alden Perkes, anyway. I’ve had this book in my family since I was six years old. In it lies all of the answers to children’s questions about the big guy. Having read the book every Christmas, I can tell you how Santa gets all of his toys in one small bag, or how old Santa really is. I even know some Elvish words. Of course, a Santa Claus book wouldn’t be complete without a cookie recipe. This chocolate chip oatmeal nut cookie is really good- crisp on the outside and soft on the inside. There is a slight cinnamon flavor that compliments the sweet brown sugar and milk chocolate. Oh, and I almost forgot, this is a no-butter dough. It is made with canola oil instead. Continue reading →
White Chocolate-Lemon Butter Cookies
I ate way too much this Thanksgiving weekend. I started on Wednesday night and I finished in about 1 hour from now. I never want to eat again. I’m going to go on a sugar free, no fat diet for the next few months. Oh wait… Christmas is coming… shoot. So, it’s time to start seriously baking. Of course, Christmas cookies are in order. I started with a delicious, buttery, melt in your mouth little treat. White chocolate-lemon butter cookies are a nice addition to your Christmas cookie collection. The base of this cookie is like a shortbread, and the white chocolate bits and lemon zest pair very nicely together. Continue reading →
How To Make Paris-Brest
Another Daring Bakers challenge, and I couldn’t be happier. This one was brought to us by Luisa from Rise of the Sourdough Preacher. I have always wanted to make this historic pastry. Paris Brest is a French dessert made up of pate choux (choux pastry), piped into a ring and baked. The ring is sliced horizontally and filled with praline whipped cream. I’ve eaten half of it. There. I said it. Continue reading →
