Maple Pound Cake

Maple Pound Cake

My mom is hosting Thanksgiving this year, but I am not completely off the hook.  My job is to make some of the desserts.  I am making chocolate caramel cream pie, pecan pie, and a vegan Grandma Ople’s apple pie.  It occurred to me, however, that some of the guests might not be pie-lovin’ people.  I decided to make these mini maple pound cakes today just in case.  They are very moist, maple sweet, and a serving size!   If you don’t own a mini bundt cakes mold, don’t fret- you can bake this in a 8 1/2 x 4 1/2 loaf pan. Pumpkin Meringue Pie

Pumpkin Meringue Pie 041-2

Confession time.  I have never, ever eaten pumpkin pie. Wait, don’t go!  I have a good reason- I’m deathly allergic to pumpkin.  Not really, but that excuse was my go-to when I was 10.  Here is the real reason-  I hate the smell of the inside of a pumpkin.  Whenever Halloween rolls around, and it’s time to carve out our Jack-O-Lanterns I always brace myself for that nasty pumpkin odor.  Well, I bit the bullet and made a pumpkin meringue pie today, and I had a slice.  It was really good.  Really really good.  Granted, I can’t compare this particular pie to other pumpkin pies, but it truly was yummy.  A yummy, creamy, autumn-flavored  pie, topped with a shiny, sweet meringue.  And it had no inner pumpkin smell whatsoever!  Hallelujah! Chocolate-Caramel Cream Pie

Chocolate-Caramel Cream Pie

I am not going to lie to you.  This is an involved chocolate custard pie.  Sure, you could make a good old fashioned version (pie crust, chocolate pudding mix, and whipped cream) and it would still be delicious.  If you want to really take it up a notch (or 10), however, then make this version.  You start with your pie dough, you blind bake it, then you make chocolate custard from scratch, and don’t forget about the caramel whipped cream over top.   Finally, you finish with a sprinkling of crushed caramel.  It is worth every step.   Continue reading →

How To Blind Bake A Pie Crust

Blind Baked Pie Crust

Blind Baked Pie Crust

I am reading the Fifty Shades of Grey trilogy and it’s messing with my mind.  Yes, I am late to the party.  I held out because I am a bit of a book snob.  When I saw the movie trailer, however, my stomach did a flip.  It was the elevator scene that did it.  So here are my thoughts thus far: There are so  many red flags with Christian Grey, and yet I still want him to be my boyfriend.  What is happening to me?!  Oh, and the plot has “jumped the shark” too many times to count, but I will not and cannot put it down.   And why hasn’t Anastasia gotten a UTI by now?  Does she really want to have sex with him ALL OF THE TIME?  Maybe she would like to just relax and watch TV one night  eating Cheetos. And speaking of the sex scenes… does the author have to describe each one in such great detail?  One or two times certainly, but she could just write, “and they did it” or “they did it again.”  Fifty Shades of Grey walks a fine line between a beautiful love story and a creepy Dateline murder mystery  entitled “Flogged In The Night”.   I think it might be the most exciting book I have ever read. Okay, let’s learn how to blind bake a pie crust.
