Easy Pie Pastry Dough

I am good at making pie pastry.  It is one of my few talents.  I even won a pie baking contest.  The New Jersey Peach Council held a peach pie competition in every county one year.  Whomever won their county’s contest moved on to the finals for the overall best New Jersey Peach Pie title.  Well, I won in my county, but, get this, the Jersey Peach Council accidentally left me off the email regarding when the final competition would be, so I missed it!  Son of gun.  They must have felt badly, because they offered me a chance to go on New York’s channel 11 morning news  to demonstrate how to roll out pie dough.  I made the big time!  My husband drove me into the city early one morning.  When we got to the news studio, I was ushered into a room to get my make-up done.  I felt important as I sat there in that make-up chair getting dolled up.  When I was just about camera ready,  the make-up lady asked me, “So, how many pies did you eat?”  She thought I was there because I had won some pie eating contest.  Ouch. Oh, how I have always wanted to bake this Viennese classic.  Sacher Torte is chocolate cake created by a 16 year old apprentice named Franz Sacher, in 1832.  You know what I was doing when I was 16?  I was probably watching TV.  Seriously, I am afraid that when I die, God will tell me how many years I have spent watching television.   Anyway, I have finally gotten around to baking this glorious torte because Korena from Korena In The Kitchen challenged me through the Daring Bakers.  Thank you, Korena! I was driving my four year old son and his friend to preschool the other day.  I was lost in thought, listening to Taylor Swift’s Shake It Off, when whispering from the backseat caught my attention.  I overheard Cam’s friend ask, “Cam, does your mom always look like that?”  To which Cam replied, “No, sometimes she wears a dress and puts her hair down and looks pretty, right mom?”  Yup, I admit it.  I don’t try as much as I used to.  I quickly drove home, put Wesley down for a nap, and made these very easy, very yummy, ghost cake pops.  When Cameron came home from school I gave him one, because that’s what I want him to remember about me.  I am the mom who has sacrificed her looks to create happy, delicious memories.  I may have also been wearing a little eye liner and mascara by that point.  Oh, and I showered too! Before diving into Holiday Dessert Extravaganza at Project Pastry Love, I wanted to bake one more laminated dough recipe.  I decided to make homemade Danish.  I haven’t worked on this dough in a while, and I love to reward myself with something sweet like Danish when I drink my afternoon coffee.  However, if I were being completely honest, I feel a little sorry for Danish.  I mean, how can you compete in a world full of doughnuts, croissants, and Egg Mcmuffins, especially when most people think of you as the prepackaged, stale, and overly sweet pastry found in vending machines.  Come on Danish, it’s time to show the people who you really are!
